Why Prima Pavé Makes The Best Non-Alcoholic Italian Wine
Prima Pavé has a surprisingly wide map of Italy behind its 0.0% collection.
Friuli supplies many of the grapes used in Prima Pavé’s sparkling and still wines, including Pinot Grigio, Sauvignon Blanc, Gewürztraminer, Chardonnay, and Pinot Noir. Abruzzo enters the picture through Montepulciano d’Abruzzo, which appears in the sparkling rosés. Farther south, Puglia is home to Fiamma and its deeply regional Susumaniello grape.
That gives Prima Pavé plenty of room to explore what non-alcoholic Italian wine can taste like. Blanc de Blancs is bright and aromatic. Grand Cuvée leans richer and creamier. Bianca D’Or brings a dry still white into the collection, while Fiamma moves firmly into red wine territory with dark fruit, spice, and tannin.
Founded by Certified Specialists of Wine Dejou and Marco Marano, Prima Pavé has built a collection that draws from several corners of Italian wine culture while keeping every bottle at 0.0% alcohol.

01
From Friuli To Puglia
Friuli sits in northeastern Italy and gives Prima Pavé many of the aromatic white grapes that appear throughout the collection.
Blanc de Blancs brings together Pinot Grigio, Sauvignon Blanc, and Gewürztraminer. White peach, green apple, honeydew, kiwi, and elderflower give the sparkling wine a fresh, fragrant profile with plenty of lift.

Grand Cuvée goes in a richer direction with Chardonnay and Pinot Noir. Orchard apple, toasted hazelnut, vanilla bean, and lemon shortbread give the wine more roundness, while fine bubbles and a dry finish keep everything lively.
Bianca D’Or also comes from Friuli, pairing Gewürztraminer with Pinot Grigio. Stone fruit, lychee, floral aromatics, and mouthwatering acidity give Prima Pavé’s still white a character that feels very different from the sparkling wines around it.
Abruzzo contributes Montepulciano d’Abruzzo to Prima Pavé’s rosés, where the grape brings red-fruit character and color to blends that also include aromatic white varieties.
Then Fiamma takes the collection south to Puglia.
Made from Susumaniello, Fiamma carries dried plum, blackberry, cocoa, cardamom, and tannic structure into the glass. It also gives Prima Pavé one of the most interesting grape stories in the collection, since Susumaniello has long been associated with Southern Italy and remains far less familiar to many wine drinkers than Pinot Grigio or Chardonnay.

What Changes From Bottle To Bottle
The geography is interesting, but the real pleasure is in how differently those grapes behave once they’re poured.
Blanc de Blancs is bright, floral, and easy to imagine as an aperitivo. Grand Cuvée has more weight and toastiness, giving it the kind of texture that invites slower sipping. Bianca D’Or brings the collection into dry still white wine, where Gewürztraminer’s aromatics and Pinot Grigio’s freshness have more room to show.

Prima Pavé’s rosés bring in red fruit and another sparkling style entirely. Fiamma changes the conversation again with darker fruit, tannin, spice, and the savory personality of a red wine from Puglia.
That range is one of the most compelling things about the collection. Someone discovering Prima Pavé through a search for Italian non-alcoholic wine can move through several wine styles, regions, and grape varieties without leaving the brand.
There’s plenty to compare from one bottle to the next, which is exactly what makes exploring wine fun in the first place.

At The Italian Table
Italian wine has always made sense with food nearby, and Prima Pavé’s collection gives you plenty to work with once dinner arrives.
Blanc de Blancs has the freshness for shellfish, salty cheeses, or a bowl of cacio e pepe. Grand Cuvée’s rounder texture and toasted notes fit beautifully alongside creamy risotto and richer dishes. Bianca D’Or’s acidity and aromatics make it an easy match for seafood, herbs, and lighter pasta.

Fiamma can handle something heartier. Its dark fruit and tannic structure sit comfortably beside tomato-based pasta, roasted eggplant, mushrooms, or a slow-cooked ragù.
Bright acidity keeps rich food moving. Fine bubbles refresh the palate between bites. Tannin gives savory dishes something to lean into, while aromatic grapes can echo herbs, fruit, spice, and cheese already on the plate.
Prima Pavé’s food-friendly character becomes especially easy to understand once the bottle is open and something good is on the table.

A Quick Note On 0.0%
Prima Pavé’s wines go through full fermentation before the alcohol is removed, allowing the grapes and winemaking to develop the character of each bottle first. The sparkling wines use a reverse-osmosis dealcoholization process and finish at a true 0.0% alcohol.
Prima Pavé has dedicated resources that go much deeper into how its 0.0% wines are made, so we’ll leave the science there. For this story, the important part is simple: the Italian grapes, regional sourcing, and winemaking all come before the finished bottle reaches 0.0%.
